Crackling Up

I appear to have chocolate crackles on the brain. Everywhere I look my brain manages to conjure up the illusion that makes certain things look like chocolate crackles in disguise! Impossible? No really, it’s true! This must be how the cookie Monster feels ALL the time! It must drive him to complete and utter distraction.

Take an ordinary everyday thing like a pile of gravel. With enough imagination that common place heap of stones has in my context, the look if not texture, of chocolate crackles. I shake my head to rid myself of the misfit image but it persists!

And then there’s the picture perfect mountain set against the backdrop of a blue November sky. I swear it looks almost delicious enough to eat, some might think more cup cake than chocolate crackle! Only if you have cup cakes on the brain maybe! Me, it’s definitely chocolate crackles.

I love the sound it makes in your ears when you bite into a chocolate crackle that first time, the one that closely resembles running your heel backwards through gravel. Only the combo chocolate copha explosion in your mouth tells a different story.

I don’t know how long I’ve been a fan and I don’t make a habit of indulging in these fanciful delights but you know. Everyone should, but they’re more your “sometimes” treat than a daily indulgence like a good cup of coffee. If you haven’t a clue what I’m talking about, here’s a recipe:

Chocolate Crackles

Ingredients

250g (1 Block) Copha
4 cups Kelloggs Rice Bubbles
1 cup icing sugar
3 tablespoons cocoa
1 cup desiccated coconut

Method

1. Melt copha in a saucepan over a low heat or in a microwave oven.
2. Mix Rice Bubbles, icing sugar, cocoa and melted copha until well combined.
3. Spoon mixture evenly into 24 paper patty containers.
4. Set in the refrigerator. Makes 24.

I’d say it’s a piece of cake but it’s not! Enjoy.
